PORK AND AVOCADO BURRITO

This recipe makes several burritos that are fun for kids to roll and eat for lunch, but any extra can be wrapped in parchment paper, then foil, and frozen. Remove foil before thawing and re-heating in the microwave. Pork is a great source of vitamin B1 (vital for muscles) and B12 (for energy)—all good for rolling more burritos!

MAKES 6 BURRITOS

6 Mango or BBQ Gem Wraps

3 cups/630 g Easy and Perfect Sushi Rice

½ cup/120 ml Green Slime

1 large avocado, pitted, flesh scooped out and thinly sliced

1 cup/225 g shredded, cooked pork (or chicken)
